Bacon and egg cookies

This is a great recipe and one of my family's favorites (to make and eat).

You will need...

One bag pretzel sticks
One block of white almond bark or a bag of white chocolate chips.
One medium bag of M & M's

First lay out waxed paper on a working surface. You will need quite a bit of room for working and drying the cookies. Wet the work surface first until it's pretty wet and then lay the waxed paper over it. This helps the waxed paper to stick to the surface much better and it will not curl up on you.

In a bowl seperate all of the M & M's. You will need the yellow ones. The orange ones also work (just call them farm eggs).

Lay the pretzels sticks out two at a time next to each other on the waxed paper. They represent the bacon.

Melt the bark or white chocolate in the microwave stirring every 30 seconds until completely melted and smooth.

Take a spoon and pour a small portion of melted white bark over the middle of the pretzel sticks.

When this is done take one of the yellow M& M's and drop it into the center of the melted bark.

This makes it look like an egg over the pretzel stick bacon. Allow them to dry and then eat them. They really do look like eggs and bacon. My kids and hubby just love them. They are very easy and very creative.

Weird monkey type bread recipe..

Ok, so here's this recipe that I make, but I cannot give you exact directions at this moment, because frankly I've been changing them from the original and I have to figure out how to write them down... but what you do is. (By the way the kids LOVE to help make this)

Buy one of the four packs of the refrigerator biscuits, any brand doesn't matter what type. Cut each into fourths.
Buy an 8 oz. cream cheese and cut it into little cubes about 1/2" X 1/2". Take each little cube of cream cheese and wrap it with a piece of biscuit. This makes all these little balls with a surprise in the center.
In a small bowl mix about 3/4 cup sugar with about 1 tsp. cinnamon. Adjust this as you like, if you want more or less cinnamon or sugar.
Grease a tube pan.
Put the sugar into a zip lock bag (gallon size) and then put the balls in and shake.
In a small bowl microwave 1 stick butter/margarine until melted.
Add 1/4 cup maple syrup and 1 cup chopped pecans (optional)
Put a layer of balls into the pan. Drizzle with a couple of TB of maple syrup mix. Reach into the bag and grab a small amount of the remaining cinn/sugar mixture and sprinkle that over the balls. Repeat this again once or twice depending on how many you put into the layer.
When all the balls are in pour any remaining ingredients over the top and then bake at 350 for at least 20 minutes, but then start checking it. I find that cooking times vary. I don't know why, but it might be where the air gaps are located or some such thing. It usually takes mine about 30 minutes or so.
Anyway, you'll be able to tell when it's done because the bread starts pulling away from the sides of the pan. Invert it right away and get it out of the pan, otherwise the caramel will stick and it won't come out. If that happens heat it up in the oven and try again.

Serve warm or you can slice it after it cools. I like it better warm, but it's good both ways.

Jessa's favorite pancakes

I call these pancakes Julie's pancakes. My friend Julie and I used to eat the quite often when I was young. We would ride horse or swim or bikeride and then come home and eat like there was no tomorrow. Now my kids love these. They call them the "thin pancakes". Enjoy!

6 eggs
3 cups milk
1 tsp. salt
2 TB oil
2 cups flour

Whisk together the wet ingredients and then whisk in the flour. The batter will be very thin. Cook them over medium heat like you do normal pancakes. You can tell one side is done when the other side sets (you'll understand that one when you make them).

Hurricane Deanna hits Warrens

You know how they say that it always gets worse before it gets better? Well let me tell you, it's true here at our house. I have started sorting, throwing away and packing with a vengeance!!!!!! I have stuff thrown all over BUT I WILL PREVAIL!!! The furniture is finally going back into rooms that it belongs in. Stuff is being unpacked out of rubbermaids. Stuff that we have not missed over these last months while it was packed away, is being sent to another home. I am going to win this battle (no matter how much whining I have to listen to . Even when I'm the one doing the whining!)

Every room is under reconstruction as I have found out that it really has to begin with the kids. I know that makes no sense, but when their rooms are full, they start bringing stuff out to play with it and it never goes back in. We are all kicking and screaming our way through this mess (I think I might be the only one screaming though).

Mom's in a sorting mood and everyone better move it, lose it or get it remodeled. I'm taking no prisoners!!!!!

Ok, so I've been busy....

Things have been so busy for us that I have had all that I can do to blog on the other blog. So...... here goes. I've decided to share some more recipes on this blog for you as the holidays are coming.

Easy Favorite for you.

Chicken with Sauce (one of my kid's all time favorites)

1 bag frozen boneless skinless chicken breasts (you can use pork chops too)
2 large cans cream of mushroom soup
16 oz sour cream

You can cook this two different ways...

First way dump chicken in crock pot, mix together soup and sour cream and pour over it. Cook it on low for at least 6 hours. It's very forgiving, so if you need 7 or 8, add a little water and let it cook.

Second way, at 350 bake the chicken with a little water in it until it's 3/4 done. It usually takes about an hour, but sometimes they don't seem to cook so they need a little more time. Pour on the sauce and then bake it
another half hour or until slightly browned on top.

For a change you can top with crumbled bacon or green onions. Serve with mashed potatoes or rice.

Don't forget the cranberry sauce on the side (being from Wisconsin and on the board at Cranfest I had to put that plug in there).

Did you ever have a dream?

With so many of our family and friends dying lately, it's made me think (I'm sure Will would say he thought that he smelled smoke) and in some ways I don't know that I like what I'm thinking.
It's two questions that I ask myself.....
Question #1-
If I died today, how would people remember me?
If you really think about it, this is a very sobering question. It was brought home to me by thinking about all the people that I have lost and realizing that they made HUGE impacts on so many lives and would deny it if you asked if they had.
My Aunt Ruth was a calm, upbeat person that never had a harsh word for anyone. She gave young women in our family someone to look up to and strive to be like. Even Jessalyn at 11 thought she wanted to be like her when she grew up. What did she do? She was just herself, but truthfully her main impact (in my eyes) was that she LOVED. It did not matter who you were, she loved you. She ALWAYS had time to talk with me, pass on advise if I asked for it and opened her home when I wanted to visit.
I think the thing that impressed me the most happened when I was in that gawky stage where you're still considered a kid, but are trying to be an adult, she would sit down and TALK to me. ME. She treated me like I was the most important thing at that time and just talked and really, really listened. I think that I can learn from that. I have been trying to listen more and to focus on what other people are saying. It's very hard for me because I have so many things crowding my mind and fighting for attention, but I'm trying. I am trying to be a better listener.

My Uncle Bill never met a stranger. He loved everyone, especially kids. At his funeral the question was asked "If your world was touched by Bill as a child please raise your hand". Almost every hand in the place went up. Bill's secret? He LOVED. He loved everyone. He loved kids most of all. He was small in stature, but had a heart as big as the outdoors and it included every kid you could find. Uncle Bill belonged to the kids and we just happened to let Aunt Jean share him.

Of course on a side note I do have to tell you that Aunt Jean has his ashes sitting on the table next to the tv until they are buried together. The reason that she put him next to the tv, is now she "makes him watch all the tv shows that he wouldn't let her watch". She'll say "I'm watching Matlock again Bill and you have to sit through it". Too funny.

My Uncle Lloyd was the last one that we lost. People are still telling us how he affected their lives. Just the other day Cranfest donated $500 to the local cemetery in his honor, for the family to do something in his name, like put in benches, plant trees etc. They usually only do a $50 donation in someone's honor. Look at the difference.
Lloyd's secret he LOVED. He loved everyone. He listened to everyone. He loved children. He remained upbeat through terrible, terrible arthritis. He even was upbeat on his deathbed (although Brett's retirement from the Packers did give him pause). Lloyd listened to people. He helped everyone he could find, if possible. He loved kids. My son misses him terribly.
I am noticing a theme here. Love everyone, listen and love kids. I think I need to work on all of these more.

Question #2
What have I done with my life?

This has so many parts. When I first graduated High School, I had a plan. That lasted for about a year. Then the dreams changed. I had always wanted to be married, but pretty much knew I never would be. Even told God that I was ok with not being married, if that was what he wanted. I was "unofficially engaged" to Will within a month. So much for that plan.
Plans changed and dreams changed as each kid came along. As the move to Wisconsin happened. Now here I am 43 years old and I still don't know what to be when I grow up.

My greatest dream has been to own and run a restaurant. I doubt that will ever happen. I seem to be a mail carrier for the long haul. It's a good job. It pays well and will pay much better when I go full time. It offers a retirement package. I guess I will stick it out. Not my dream, but I guess it's where God wants me.

I have 4 books started and cannto find the time to finish them. I have them all written in my head. I think about them on the mail route, but cannot find the time to type out the words. Will has read one of them and seemed to like it. I have dreams of finishing them. I don't even think that I have to publish them. I just want to finish them and get em out of my head. They don't go away, they just stay there and something will happen and it will trigger another chapter in my head. Strange.

I love gardening. I always wanted to have one of those yeards that you are just drawn into. I want peple to want to walk throught my yard and just spend time enjoying it and the quiet. Lots of work later, I think I'm closer, but a long way away from that feeling. I will keep trying on that one.

I dreamed of being the "cool mom". The one that all the kids wanted to have as a chaperone, or that all the kids wanted to be at our house. Not happening. I suppose it does to some extent, but working 6 days a week certainly has it's draw backs.

I had so many places that I wanted to visit in my lifetime and now, that lifetime it closer to being over and have I visited them? I wanted to take my kids to so many places, Have I?

Most of all... I want to be remembered by everyone like Ruth, Bill and Lloyd are. I want to love, listen and care. I big order and I think that I fail miserably, but I am going to try to do better. Starting today.

Recipe Rhubarb cake

I probably didn't spell Rhubarb right... for all I know it's rubarb, but the "h" makes it seem much more dignified. Anyway, I got this killer cake recipe from my Aunt Marjorie and here it is.

Remember when cleaning your rhubarb only wipe it down with a damp cloth. Never run it under water. It acts like a sponge and soaks up liquids. Try not to pick it right after a rain either, same reason.

Rhubarb Cake

4 cups chopped rhubarb
1 1/2 cups sugar

Mix together and set aside.

Now make a yellow cake mix as per the directions on the box. Pour the cake batter into a greased cake pan, just like you would to make just the cake.
Spread the rhubarb and sugar as evenly as you can over the cake batter.

Pour 1 cup whipping cream over the top of the whole thing.

Bake at 350 until set. Remember that the fruit and cream make a custard underneath the cake, so you just make sure the cake is done. Your knife will not be clean towards the bottom, but the cake will be fine. It will brown nicely on the top.

Serve warm with more whipped cream or ice cream. WONDERFUL!!!

Will does not like rhubarb, so every once in awhile, I make this with sliced peaches (canned or fresh) and 1 cup sugar instead of the rhubarb. It tastes great too.

We interrupt this program...

Since Will is currently running the "mini-series" As Broadband Turns on the regular blog, I will play this fill in episode on our family over here as to not interrupt the scheduled programming over there.
The main thing going on with the rest of the world outside of my husband and his failure to learn anything at the Dale Carnegie course he took years ago (it was called How to Win Friends and Influence People), seems to be SNOW. Again. Maybe I should call this program a "repeat"? Or maybe "As the Shovel Turns"?
I am soooooo sick of snow. Yesterday on my route they never plowed any of the roads. It snowed 6-8 inches during the day and there we were trying to drive around in it. I was stuck so many times, it ain't funny. They pulled me out of a ditch with a truck. Then they pulled me off of a set of mail boxes where I had slid sideways onto them with my mirror stuck between the two boxes. One of those "stupid things happen to me moments". How many people do you know that can manage to get a mail truck stuck on two mail boxes without hurting either box, but unable to go frontwards or backwards because of it? I looked like a big white Popsicle. Yep that's me....Mail truck on a stick. Took three guys, a shovel, a hammer and a snow blower to get me out of that situation.
Then when I was done with the route, I had to drive to Black River Falls 27 miles away. I mean "had to" for a deadline/appointment. It took me an hour to get there. First I tried the interstate, but those people drive like idiots. There were people in the ditch all over and the people that were driving around me seemed to think they needed to join them. I got off that merry go round at the next exit and drove through the slush with no traffic. Get me away from them crazy people.
Jessalyn is going gangbusters at school. She is really getting into this year's classes and is enjoying her teacher. She is really looking forward to her trip with the safety patrol to Washington DC and Gettysburg. I'm glad that she gets to go (God willing).
Jacob is applying himself more in class and seems to be slowly getting better able to focus on class and what he is supposed to be doing. He really likes his teacher and she is not afraid to push him. He is finding more friends in this new school and seems to be finding a place in High School and enjoying it much more than he had been. Now that he also has the XB*X 360, I think he feels his life is getting pretty darn good. Now if his Mom would only stop finding chores for him to do.
We have reached the "cold part" of winter. Temperature tonight is supposed to be -20. No fun. I could do without this. I'm telling you if I could be in Florida/Tennessee from January 2 through March 31, I would. Will says that if I didn't have to drive in snow all day it wouldn't bother me, since I used to love it. He's probably right, but right at this moment, I'm thinking that I like my idea better. The condo I stayed at last month in Perdido Key, rents for $850 a month with a balcony overlooking the beach. Sounds like a plan to me. What do you think?
Will and I are reading electric meters this week for my parents while they are in Texas and Tennessee. We have fun, but what weather to do it in. We will read them as fast as possible over the weekend. Then I will take the results down and turn them in on Monday.
It's Martin Luther King day on Monday and the Post Office gets the day off. Of course, no one else in the world seems to take that day off, so the day after is possibly the heaviest mail day of the year. Boy am I looking forward to that. We have a bunch of regular carriers taking that day off, so I will be chasing subs around and helping them with their routes so that they get done in time. Nothing kills my brain more than doing 3 to 5 mail routes in a day. Just makes my brain spin and wears me out. One of the things I will not miss once I become an "official regular carrier".
Well time to go and fold laundry and do dishes. Jake just went out for the bus. I hope that the substitute driver remembers to pick him up. Yesterday she forgot and just drove past, leaving him standing there. He ran in and we called the office and she came back for him. It wouldn't be so funny, but this is twice now this year, that they have left him. I wonder if he got the stupid things happen to me gene? I'll have to think about that one.....maybe that would explain the doctor bills from the emergency room for him.....I'm thinking it's a possibility. Poor boy.....Now look what his Mom did to him.
Of course the daughter is sporting an ace bandage on her wrist and hand after getting them wrapped up in the dog leash. Oh boy.......talk about a Mother's curse. Forget the "I hope you have a kid just like you".....If I gave them the stupid things gene, that's punishment in itself or maybe "justice"? I guess it all depends on how you look at it. They drive me to insanity and I pass on stupid things...... Cool.

Cobbler recipe

This is a favorite for pot lucks and for when company comes over unexpectedly.

Cobbler

Decide what flavor you want first of all. It's great with pineapple or peaches. I have even tried it with pears, although I cut them into tiny pieces first, because pears stay firmer than the other two.

For the cobbler you will need:

2 cans fruit.
1 box yellow cake mix
2 sticks margarine or butter, melted

(For pineapple, I use one medium can chunks and one medium can crushed. For peaches I use what ever size I have, medium or large cans. I try to keep the sliced on hand.)
It does not matter what size can because in my opinion you cannot have too much fruit, just too little.
You pour your cans of fruit into the bottom of a lightly greased cake pan (9 X 13). Spread fruit evenly. When working with peaches and using the largest cans you may want to drain a little of the juice. Try it and see what you think first and then adjust it the next time.

Pour your cake mix (dry) over the fruit. Pat out evenly with your hand and press down so that it kind of seals the edges.

Pour the melted margarine over the fruit.

Bake in a preheated 350 degree oven until browned and bubbly. It will usually take about 25-30 minutes, but allow a little longer. For some reason it does not take the same amount of time to cook each time. Check often and take it out when it's browned, bubbly and gooey. Serve by itself or warm with icecream.
