Hello out there!

I thought I would give this a try. Sometimes I have a great recipe to share or some wise bit of information. Sometimes it's just more of the stupid stuff that happens to me. We'll see how this goes.

First recipe:
(There is no way that this is lowfat, but it's sooooo worth it. Walk some extra steps or do some extra situps. Kids love this!)

Gram's Corn Casserole

2 sticks (1 cup) margarine or butter, melted
16 oz container sour cream
2 cans whole kernal corn (DRAIN ONLY ONE)
2 cans creamed corn
2 boxes jiffy corn muffin mix

Preheat oven to 350. Grease 9 X 13 cake pan.

In large bowl, mix margarine and sour cream until smooth. Add all cans of corn, mix well. Add muffin mix. Mix until no lumps of corn meal remain. Pour into baking pan and bake for at least 35 minutes. Most ovens take 45 minutes to an hour, but you just have to watch it and figure out your oven baking time for yourself. You will know it's done when the center is set like a cake. The casserole will pull away from the pan sides, just like a cake does when it is done.
Serve warm.

**If you are taking this to potluck or something that it might need to sit around a little bit, you can add an egg or two to the mixture to help it stay moister longer.
